Weather and Recipes

One thing I love about Rochester, is that it rains every other day.  It is wonderful.  We woke up to a wonderful down pour.  This isn't rain like in the desert, this rain lasts for hours!  I love to listen to it and watch it.  It is just wonderful. 

Here is that recipe for the Chicken Curry...
Spice Mix:
1 Med Onion, cut into big pieces
1 small bunch Cilantro
2 C. Yogurt
1 Med Ginger Root, about 4" long, peeled
1 Large blulb Garlic, peeled
1/4-1 green chile (can also use 1 tsp red chile flakes or coarse black pepper)

Blend that all together in a blender or food processor.  If you need more liquid, add 1/2 c. water while blending.

Chicken
1 Med fresh chicken, cut into small/med pieces
1/2 tsp. salt
1/2 can coconut milk (or 2 cups water)
4 Tb olive oil
1/2 c. cashews or other nuts (optional)

In a large pan, mix chickn, turmeric, salt, coconut milk, and spice mix.  Cover and let chicken marinate for 4 hours or overnight.  In another large pan, add olive oil, cashews, and chicken with marinade.  Fry until lightbrown then cover and cook for 20-25 min.  until chken is thoroughly cooked.  The liquid should be gravy/stew consistency.

Serve with basmati rice and Naan.  Delicious!
