dtaka-dtaka-dtaka-ween Pawty

That's how little cool cat says it.  He has the cutest little language.  He wasn't too excited to wear his costume, but once he figured out it was fun and everyone was wearing one he came around to it.  Especially when he learned how to "Trick or Treat".  He thought that was pretty cool.  We went to our ward Halloween party on Saturday; we told him at 10am that we were going to go so for the rest of the day it was... dtakadtakadtaka aween pawty?  So by the time we were going he was super excited.  Our ward does a party then trunk or treat and some people go all out in decorating their trunks.  Of course I left the camera in the car but Toddles favorites were the van with cauldrons lit with flowing fake flames and smoke bubbles, and a giant spider on a spider web.  It was interesting and so fun.

Handsome man. Do you like our pumpkins?  Toddles and I love the "moostass" as Toddles likes to call it.

"Let's Go Dad!"

His "Haul", he loved to get suckers in either Red or Blue, or red Kit Kat which I'm happy to sample.

Our tradition for Dinner on Halloween is to make a pizza in the shape of a pumpkin.

I have to put in a plug for the costume, I made it back in July and I love it!  I can't get over how adorable and puffy it is.  I knew it was going to be chilly so I made it big enough to wear a jacket and warmish clothes underneath and have it still look cute; I think it was a successful costume.  And it fit his personality so well.  I originally wanted to make him into "Dash" from "The Incredibles" movie, but I couldn't find a pattern for his size, that really would have captured him.  He is very fast especially when it comes to escaping.

I don't know about you, but I love food

Its true.  I absolutely love food.  I love recipes.  I read cook books and recipes like novels.  I find them so exciting.  All the combinations of flavors and ingredients to form delicious concoctions to be tasted and enjoyed.  I used to work at a surgical center and they subscribed to so many magazines, many of which were food mags.  (Which is kinda rude considering all of our patients had to be fasting before their surgeries, so sad for them.) I got to enjoy them and used a lot, and I mean A LOT of paper copying recipes.  Do I ever use these recipes (that I still have and hauled across the country, while I whined and complained about Brett hauling all his textbooks that he "might" use in medical school)?  Not really, but I still like to read them.  However, I have been using a lot of ideas off of Pinterest lately.  I told you how obsessed I am with it.  It has come to the point that I have to write in my daily to do list "No Pinterest Until Night."  That way things actually get done.  So, tonight I made a "Tuscan Chicken Stew" that I pinned last week.  Mmmm, it was so good and so easy.  I was really surprised at how easy it was.  I am sure it would have been better had I used the red wine it called for, but I don't drink and I don't cook with wine.  (It usually makes me sick if I do, so I don't anymore.)  But the stew was delicious.  Toddles wouldn't touch it, but that isn't saying much, all he wants are pancakes.  But Brett really liked it and I think it is a keeper.  Here's the recipe, my midifications in italics:

Tuscan Chicken Stew
1 onion
4 cloves garlic I know it seems like a lot, but so good
1 (15-ounce) can cannellini or Great Northern beans I don't like beans, but these have their casing removed so they aren't "as" bad
8 bone-in skinless chicken thighs (about 3 pounds) I used frozen chicken breast that I chopped.
Kosher salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
Pinch crushed red pepper flakes
1 large sprig rosemary or 1 teaspoon dried Italian seasoning
1 tablespoon tomato paste
1/2 cup dry red wine I used chicken broth
1 (14-ounce) can chopped tomatoes
3/4 cup chicken broth
1 small head escarole or 4 cups baby spinach leaves (about 8 ounces) I used frozen chopped spinach
1/2 cup freshly grated pecorino or Parmesan cheese (about 1 ounce)

1. Chop the onion; smash and peel the garlic. Rinse and drain the beans in a colander or strainer.

2. Heat a Dutch oven over medium-high heat. Pat the chicken dry with paper towels and season all over with salt and black pepper. Add the oil to the Dutch oven. When the oil is hot, add the chicken skinned (rounded) sides down, and brown, in batches if necessary, about 4 minutes per side. Transfer to a platter when done.

3. When all of the chicken has been browned, reduce the heat to medium, add the onion, garlic, red pepper flakes and herbs; cook, stirring until the onions are slightly soft, about 5 minutes. Stir in the tomato paste and cook until brick red, about 1 minute. Add the wine and use a wooden spoon to scrape up any brown bits that cling to the pan. Bring to a boil and cook until syrupy, about 1 minute.

4. Add the beans, tomatoes and chicken broth, and bring to a boil. Nestle the chicken pieces in the stew, adding to the pan any collected juices from the plate. Simmer the stew, uncovered, until the chicken is cooked through, about 20 minutes.

5. Trim the escarole and tear the leaves into bite-size pieces. (If you're using baby spinach, there's no need to do this.) Wash the escarole or spinach and drain. Add the greens to the stew, cooking only until wilted, about 4 minutes. Stir in the cheese and season with salt and black pepper to taste. Serve in shallow bowls.

I hope you try it, we loved it.

Obsessions

I am perfectly lovin' and obsessed with Pinterest.  Its true, there are so many amazing things to be found on Pinterest.  Recipes, crafts, photography, anything, its all there.  And its such a boost to your self esteem when random people follow your boards.  Its just so nice to know other people think the stuff you think is cool is also cool.  I have used quite a few ideas from it already.  My favorite being French Toast Muffins (recipe.)  So delish!  Next to try, french toast and bacon muffins mmm... bacon...

(smiling)

The zoo has this fun little river that the kids can play in.  Consequently it is Toddles favorite place at the zoo.  Its really great when its hot out, not so much when its kinda chilly (its not full of water during the winter) but Toddles doesn't care.
In other news, Toddles is talking up a storm, and one of his new favorite things is to sing.  He loves the Winnie the Pooh song, Jesus Wants Me for a Sunbeam, In the Leafy Treetops, and our new fav Tigger song.  He will demand a song, then another and another and another... He sometimes sings along, which is adorable.  We sure lucked out with this kid, we love him to pieces.

13.1

A couple months ago I entertained the idea of running a half marathon with some of my running friends.  I don't think I actually thought it would happen, but it did!  I ran a half marathon, 13.1 miles on September 24.  My friend MaryAnne found a race on a Saturday up in Niagara Falls.  So on race day we headed up early to pick up packets while Brett and her husband brought the kids later.

I hadn't been able to train as well as I had wanted (or should have) so I was really hoping to do the whole thing in under 3 hours.  Even if I had to walk I would finish it.  Much to my surprise and joy, but I did it in 2 hours 14 min and 30 seconds!  I couldn't believe it.  That is a 10:16 minute mile!  A perfect pace.  Although, I had done the first 7 miles at a pace at about 9:15, then I really slowed down.  But, I didn't stop, and I didn't walk.  I ran the whole thing!

Last year I (jokingly but probably would have done it if he said yes...) asked Brett if we could put some running stickers on our car, you know, cause it looks cool.  He said the only way I could put a running sticker on the car was if I actually ran a race.  When I finished the race he said we could get a sticker, and as soon as we got home he ordered one from Amazon.  I half ran the race just for the sticker.

I was go grateful to Brett for supporting me in this.  He was able to park at a couple stops along the route so he and Toddles could cheer me on, and that was such a blessing.  Twice he showed up just when I needed a boost to keep going.  The route was beautiful.  We ran through these cute little towns and right next to a river.  Then we ran through a park and all around historic Fort Niagara,  which was really cool.  Then we ran on the express way for about 4 miles and that was pretty tough and hot.  But then we turned a corner and the finish line was right in front of Lake Ontario.  It was a perfect day for running a race.  They had provided some delicious apples at the finish line so we sat on the beach while Toddles through rocks into the lake.  It was a perfect day.
Since we were in Niagara Falls and so close to the Falls, we decided to be tourists and check it out.  It was really fun too.  The falls are incredible.  We took the boat ride, "Maid of the Mist" to see the falls up close.  Toddles really loved it.  He talked about it for a week.  I was pretty excited to be in the place that Jim and Pam got married.

It was a very special day.

Baffled

Tonight we had biscuits and gravy for dinner.  Brett decided to he needed a little more spice to his country gravy so he added some red pepper flakes.  Seeing his Dad do something fun Toddles demanded he have some too.  We kept saying no, it won't feel good.  It makes it really spicy.  It will make you cry... blah blah blah.  So, after two minutes of tears we let him have some.  He stuck his tongue out and Brett put a little flake on it and.... nothing!  Oh wait, not nothing... he says "More!"  we gave him some more. Again, "More!" then he added "I do it."  Not the reaction I was expecting.  That whole hot sauce in the mouth as punishment would so not work.

In which I make a poor choice in color...

After our big summer vacation, I decided that since we are going to live here in this apartment, half basement and all, for another 3 years we might as well paint and make it look better.  I spent a lot of time looking at hgtv.com and got lots of good ideas.  I really loved the idea of a bathroom that was cobalt blue and everything else to accent was bright white.  Most of our bathroom is white so I thought it would work for us.  No, it didn't.  Have you ever been in a cave?  Well, once we got it painted it felt like one.  That superman would have an affinity for.  It was bad!  And not just because of the green shower curtain.  I was so distraught.  Thankfully Brett hated it as much as I did and agreed to immediatly get some good primer and a new color of paint.  I chose a lovely gray and I love it now. (Pictures to come.) But I could help post about my blunder in color.  Enjoy.

Makeshift pool

He's just cute.

This is the size of hail that fell from the sky a couple of weeks ago.  We are so glad we were inside and not out on a walk.  And yes, I realize there were duplicate pictures in the 2 previous posts.

Summer continued

At the Hogle Zoo, they have exhibits all over the park called Zoorassic Park.  They were by far the most interesting thing for our little one.

He spent the a lot of time climbing in and out of the window wells.

Best summer ever!

Big helper

Strawberry cheesecake for my birthday, it was delicious!
In this next sequence of pics, you will see what happens when you give a 2 year old a power hose to wash Apa's truck, in case you can't already guess...

(my favorite)

At the Walker family reunion.  Toddles was definatly the leader of the pack.  The older kids would follow him wherever he went.  He was in heaven!

On Troy's motorcycle.  It couldn't get any better!  Thanks for the great summer family!
